Who Will Be Affected?
The new standards apply to a range of food businesses, particularly those in Category One. This includes:
- Restaurants and Cafés
- Bakeries
- Fast Food Outlets
- Mobile Food Vans
- Hospitals and Aged Care Facilities
- Childcare Centres
These businesses typically handle unpackaged, potentially hazardous, ready-to-eat food, making compliance with the new standards crucial.
New Requirements for Temperature Control
One of the major changes in the standard revolves around temperature control. If your business handles potentially hazardous foods, the following are now mandatory:
Accurate Temperature Measurement: Businesses must have a temperature measuring device that is calibrated, in working condition, and readily accessible. This device must measure the temperature of potentially hazardous food with an accuracy of +/-1°C.
Record Keeping: There is now a requirement to maintain records of food temperatures for deliveries and storage of potentially hazardous food for a minimum of three months.
Why Is This Important?
Temperature control is vital to preventing foodborne illnesses. These new standards are designed to enhance food safety across the industry, ensuring that consumers receive safe, high-quality food products.
